My Go-To Yeast |

This is my favorite dry yeast. It does not matter whether it is pitched dry or rehydrated, it takes off quickly and ferments aggressively. Warmer fermentation temps will give you a relatively subtle "English character" and cooler will give you a mostly neutral yeast flavor.
This yeast shines in Pale Ales, IPA's, IIPA's, Stouts, Porters, Blondes, Browns, and Reds. The one thing to take into consideration is this: It is an aggressive attenuator. 78% Attenuation is pretty average for your everyday Pale Ale/IPA grain bill mashed at 152F. Beers finish dry. If you want more body, adjust your grain bill and/or mash above 154F. Overall, a fantastic yeast for nearly all types of ale.
