The Kolsch II strain is warmer fermenting than Kolsch I, flocculates much better and clears more quickly. Though a little easier to manage, they are similar in that they are both lager-like ale strains that are lightly fruity, crisp and clean, accentuating of hop flavors, and with a hint of sulfur that disappears with age. Suitable for Altbiers and pseudo-lagers.

5 of 5 Best Kolsch yeast I've tried! Tuesday, April 16, 2024

I've used all the Kolsch yeasts, and this one is hands down my favorite. I ferment this at 66F, and it chugs through the wort. Makes an exceptional Kolsch style ale. Use Biofine and you'll have nice clear beer in a week. Otherwise, condition as usual.

Beer turned ok pretty good.  Chewed through all the sugar in just a few days.  Not as clear as I was hoping but I think more time in lagering will help with that.  My biggest complaint is it has a little too much fruitiness for my liking.  If you can't keep fermentation temp down for Kolsch I, I think this yeast will be good for you.  If you have a fermentation fridge or chamber, I'd suggest Kolsch I over this.
