True top cropping yeast, low ester formation, broad temperature range affects styles. Cold fermentation will produce lager characteristics including sulfur production. Fermentation at higher temperatures may produce some mild fruitiness. Generally, yeast remains significantly in suspension. Beers mature rapidly, even when cold fermentation is used. Low or no detectable diacetyl.

Styles: American Wheat or Rye, Berliner Weisse, Biere de Garde. Dusseldorf Altbier, Kolsch, Northern German Altbier

I fermented cool and made a lager-like ale with this yeast and it came out great.  Flocculation was better than expected.  After cold crashing at 35F for a week the beer was fairly bright.  

This yeast works with altbier, kolsch, cream ale, pale ale, IPA, stouts, blonde ales, and porters.  Sure, there's probably another yeast that is better for all those styles.  However, German Ale is a good all around ale strain.  

You'll want to play with the temperature range to dial it in to your tastes but once you figure it out this makes a good "house strain".  Also,  you'll want Ferm Cap S if you have limited head space in the fermentor.  This stuff is aggressive and makes a large krausen.

Excellent Yeast I have used a couple of times now. You NEED to understand this stuff can and will get Violent! Don't hate it, it's just doing its job! Just leave some extra room for it to do so!

Good yeast. I've used this for alt biers, american wheat beers and cream ales. It's an excellent strain. Exceptionally clean. Will ferment well from 56-64F. It does not produce a very good beer above about 66F so if you can't keep it cool maybe consider US-05 or 1056.

But if you can keep it cool, you get a beautifully clean almost lager like fermentation with a nice crispness to it. The attenuation in real life is on the order of 73-76%, so if you want a nice dry alt bier, mash low or use some simple sugar to help attenuate further.

But it really makes a nice cream ale when fermented at about 64F. Probably need some finings to get this to flocculate. It's a dusty strain. I have good luck with cold conditioning and gelatin.

It seems that all the products at ritebrew are fresh but get the preorder if possible-i got my yeast this way and it was super fresh. 7 day old yeast is unheard of-but it happens here.

Use a blowoff tube, even with beer ferment temp of 58.
