FLAVOR: Plain cider one is OKAY, but I prefer these: Pear-Strawberry, Redberry, Raspberry-Mango, Peach-Passionfruit.
CARBING: There are no instructions for carbing these; carbonate them like ordinary beers, 6-9 ounces of dextrose sugar in boiling water, racking from secondary to bottling apparatus, then bottled in cleaned bottles. Carbed cider is 10x better than non-carbed.
RACKING: There are no instructions for racking, but do that when carbing too. If you don't carb, you probably don't have to rack (if your brew device has a nozzle already), BUT if you have a flavor packet (i.e. raspberry-mango, etc.), empty the flavor packet with the carbing-sugar, BEFORE racking/siphoning into the empty racking chamber, then rack. This is must for non-plain flavors to evenly distribute the flavors.
ALCOHOL %: They say 2.5 pounds of sugar for ~5%, I use 5 pounds to get ~10% (add 1 extra fermentation day for each 1% more you want).
DRINKING: Enjoy it.
