This brewed up to be a light, easy to drink blonde ale. Overall the beer is very crisp, with just a "hint" of fruitiness from the yeast and a touch of spice from the hallertau hops.  The Wyeast 2565 strain requires a little extra work for an ale, since it doesn't flocculate without some intervention, but is worth it in the end product.  I used cold crashing and gelatin to drop it and the beer cleared out well.  Basically, if someone handed me one of these and told me it was a commercial beer, I wouldn't question it.

Brewed this beer as my first from this site. I was pleasantly surprised at the result. The kit is all DME, which I wasn't excited about as I've never done a kit without LME as the primary malt, but the results speak for themselves. I've had several people sample this that are not big craft beer fans, and they really like this one. If you know someone who wants to get into the craft scene, or someone who says they don't like craft beer...hand them one of these. As for the Kolsch taste, I have to say it hits the mark here as well. The Hallertau hops give this beer a subtle fruity/spicy note similar to a Belgian but without the strong orange/coriander flavor.
